Zucchini Crisp time

Today it was time to take some of the king sized zucchini and turn them into some crisp.  For those of you that have not had the opportunity to try it, it may sound a bit strange, but it does in fact taste just like apple crisp.  If you would like to try some (and the family hasn’t eaten it all, stop by for a serving.)

Now, in order to spice up the blog post, here is a photo augmentation of the steps.

First start off with some large zucchini.  Peal them, slice them, remove the spongy center and dice them up.

Having a helper makes the process go faster slower.  🙂

Eight cups of zucchini later were ready to get to cooking.

Now the magical alchemical process.  Cooking the zucchini in lemon juice magically turns them into apples.

Add cinnamon and nutmeg to the sauce to further hide the fact that these are in fact zucchini and not apples.

For the crust, start off with a pile of flour and sugar.

The real reason this tastes so good.  Well, this and the three cups of sugar.

Crust is pressed into the pans and ready for the ‘fruit’ mixture to be poured on top.

After a bit in the oven… Voila, Zucchini Crisp that tastes just like Apple Crisp.  Now if you will excuse me, I believe I will help myself to a serving with a nice sco0p of ice cream.
