  1. Bahahahhahahah – as someone who can’t seem to grow a squash to save her life, I’m mostly (zucchini) green with envy. My favorite thing to do is slice them thin, like planks,.Then put them in a colander and sprinkle with salt to draw out the. moistuere After an hour to overnight of that, I treat the zucchini as you would. lasagne noodles. The “lasagne” freezes well and it’s much easier to give away in that state. May all of your problems be so rich!

      You are right, it is a good problem to have. My fear is always that I will give a pile away and then the plants will stop producing or die from the latest pest/disease du jour. Still, better to give away too much than have to throw them out because we couldn’t eat them in time.
